This unusual and delicious dish is also known as sweet and sour “vegetarian” pork. The brown coating is slightly resilient and very crisp, the walnuts crunchy, and the reddish sweet and sour sauce flavors both vegetables and walnuts. It is delectable.
Soak the walnuts for 5 minutes in boiling water and remove any clinging skin. Dry well and then deep-fry them. Let them cool on paper towels.
