This colourful dish is an Eastern Mediterranean classic. Red or Puy lentils would make an equally good substitute for the green lentils that are used here.

Ingredients

  • 225 g/8 oz/1 cup green lentils

Method

  1. Put the lentils in a pan and cover with cold water. Bring to the boil and boil rapidly for 10 minutes. Remove the pan from the heat, drain the lentils and set aside.
  2. Heat 15 ml/1 tbsp
