It is an irresistible combination of red lentil purée with thin slices of meat – the smooth lentil and tomato mixture provides the perfect backdrop for the deep-fried smoked pork sausage and crisp basil leaves. This tasty dish is equally good when made with classic Genovese green pesto or sun-dried tomato red pesto.
