Flavoursome red lentils are combined with deep green spinach and rich coconut milk to create this simple but unforgettable Indian dhal dish, also known as dali ambat. The texture is deliciously creamy, the colour is vibrant, and plenty of protein and fibre in the lentils make it an excellent vegetarian main course. You could serve this dhal with boiled basmati rice to make a satisfying meal.
