Sauerkraut is a staple throughout Ukraine and this soup is an old-time favorite. In my version, the stock is made first, and then ladled over the cooked sauerkraut before serving. Someone once asked me: “Why in this order?” And my reply was that it was the way my Baba did it! Serve kapusniak with plenty of warm crusty rye bread or cooked buckwheat kasha.
