This satisfying soup captures all the flavors of summer in Ukraine. The fresh peas give it exquisite color. If fresh peas are not available, use frozen peas, but thaw before using.

Ingredients

  • 6 scallions including green tops, chopped
  • 2 tablespoons sunflower oil

Method

In a large saucepan over medium heat, gently sauté the scallions in the sunflower oil until soft, about 5 minutes. Add the peas, water or broth, salt, and black pepper. Bring to a boil, reduce the heat to medium-low and simmer about 10 minutes for younger peas or about 20 to 25 minutes for larger or older peas, stirring occasionally.
