This basic cream sauce is used often in Ukrainian cookery and is a favorite standby for many meat, vegetable, and grain dishes.

Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons unbleached all-purpose flour
  • 1

Method

Melt the butter in a medium saucepan over medium heat. Stir in the flour making a paste (roux) and continue stirring for 2 minutes (do not let brown). Slowly add the milk and chicken broth and stir steadily over medium heat until the mixture boils and starts to thicken. Reduce the heat to low and continue cooking another 3 minutes. Stir in the salt and black pepper. Serve as is or use as a base
