This is probably the best-known Ukrainian classic. How the noble city of Kyiv came to lend its name to the dish is not clear. In traditionally prepared Chicken Kyiv, a boned chicken breast (with the wing attached) is stuffed with butter, dredged in coarse breadcrumbs, pan-fried, and then served immediately so the butter spurts out as the meat is cut. It is a preparation that bears witness to the humble chicken’s almost cult status in Ukraine.
