Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 2 large onions, halved crosswise and thinly sliced
  • 5

Method

  1. In a heavy medium-size soup pot, melt the butter over low heat. Add the onions and garlic, cover, and cook, stirring occasionally, for 15 minutes.
  2. Add the sorrel, stir well, and cook, covered, 5 minutes.
  3. Add all the remaining ingredients, and bring to a boil. Reduce the heat, cover, and simmer 50 minutes.
  4. Process the mixture, in small batche
