  • 6 tablespoons (¾ stick) unsalted butter
  • cups chopped onions

Method

  1. Melt the butter in a large heavy saucepan. Add the onions and cook over low heat until soft and translucent, 15 minutes.
  2. Add the peas and stock, and simmer 20 minutes longer. Allow to cool slightly.
  3. Transfer the soup to a blender or food processor and process until smooth.
