Ingredients

  • 4 tablespoons (½ stick) unsalted butter
  • 1 large onion, diced

Method

  1. Melt the butter in a soup kettle. Add the onion and cook over low heat until wilted, 10 minutes.
  2. Add the carrots, celery, stock, ¼ cup dill, salt, black pepper, and cayenne. Bring to a boil, reduce the heat, and cover. Simmer until the carrots are tender, 40 minutes. A
