When the tomatoes are ripe and the sun is hot, there’s nothing quite as refreshing as icy cold gazpacho. And since we can’t seem to get enough of it, we’ve made a salad out of that same great garden stuff.

Ingredients

  • 1 cucumber, peeled and sliced
  • 3 scallions (green onions), white bulb and 3 inches green, coarsely chopped
  • 4 plum tomatoes, q

Method

Combine all the vegetables in a bowl, and toss gently with the dressing.
