Thin slices of cucumber combine with yogurt and lots of mint for a cool, refreshing salad any time of the year. If black radishes or daikons are available, they’re a great variation.

Ingredients

  • 2 cucumbers
  • ½ teaspoon coarse (kosher) salt
  • 1 cup plain l

Method

  1. Peel the cucumbers, cut them in half lengthwise, and remove the seeds. Slice the halves into thin crescents. Lay them on paper towels, sprinkle with the coarse salt, and refrigerate, uncovered, for 1 hour.
  2. Remove the cucumbers from the refrigerator and pat dry.
