This sweet and savory oil makes for a great marinade, and also works well drizzled over grilling meats or vegetables. The number of herbs and spices given work well in 8- to 16-ounce bottles.

Ingredients

  • strips of orange zest, 2 × ¼ inch
  • Bay leaves
  • Dried long red chile peppers
  • Whole allspice

Method

Place a strip of orange zest, 1 bay leaf, 1 chile pepper, 3 allspice, and 6 peppercorns in each decorative, clean bottle. Cover with the oil. Let steep at least two weeks to bring out the flavors.
