With this simple preparation, Sheila’s daughter Molly seems to come up with a perfect basic vinaigrette every time. Her method for incorporating the ingredients may be unusual, but works perfectly. Molly says, “For an Italian night, add a bit of Parmesan.”
Place all the ingredients except the cheese in a small bowl. Hold a wire whisk upright in the bowl, and rotate it between the palms of your hands until the vinaigrette is well blended. For an Italian accent, add Parmesan.
