Curry Mayonnaise

A perfect dressing for chicken or seafood salads.

Ingredients

  • 1 tablespoon safflower oil
  • ½ onion, finely chopped
  • 2 tablespoons

Method

  1. Heat the oil in a small skillet. Add the onion and sauté over low heat until soft, 8 to 10 minutes. Add the curry powder and cook, stirring, 5 minutes. Set aside and allow to cool thoroughly.
  2. When they are cool, combine the curried onions with the mayonnaise, lime juice, sour cream, and chutney. Stir well. Refrigerate until ready to serve.
