Toss a Waldorf salad with this creamy dressing or drizzle it over a sliced avocado, orange, and tomato salad. Chicken salad with cool green grapes combines beautifully with it, too.

Ingredients

  • 5 tablespoons fresh lime juice
  • 2 eggs
  • 2 tablespoons D

Method

Place the lime juice, eggs, and mustard in the bowl of a food processor, and process for 15 seconds. With the motor running, slowly pour the oils through the feed tube and process until the mayonnaise has thickened. Transfer it to a bowl, and fold in the lime zest and pepper. Cover and refrigerate until ready to use.
