First select the tender-most spinach leaves and whitest button mushrooms, then toss lightly with this creamy dressing infused with chervil, garlic, and scallions. Delicious on a salad composed simply of fresh spinach leaves.

Ingredients

  • 6 slices bacon, diced
  • 1 cup mayonnaise
  • 1 cup

Method

  1. Sauté the bacon in a skillet until crisp. Drain on paper towels, and set aside.
  2. In a mixing bowl, whisk all the other ingredients together; then add the bacon. Refrigerate, covered, for at least 1 hour before serving.
