This common green bean was formerly known as the string bean, but the string has been bred out and now occurs only when the bean is overripe. Green, or snap beans are best when they are barely mature and thin; the seeds should be barely visible. They should also be crisp. Break one—if it doesn’t snap, it’s not fresh. Buy about ¼ pound per serving. Refrigerate beans unwashed in open or perforated plastic bags up to three days.
