This dish makes use of only the very top of the stalks, the tiny green buds. Reserve the rest for soups or stir-fry.

Ingredients

  • 1 large bunch broccoli (3 to 3½ pounds)
  • 2 tablespoons olive oil

Method

  1. Using a sharp knife, carefully slice off the very tips (no more than ½ inch) of the broccoli florets; you should have about 3 cups.
