Increasingly available in vegetable markets, bok choy (Chinese cabbage) is an excellent accompaniment to seafood and poultry.

Ingredients

  • 1 head bok choy
  • 1 tablespoon vegetable oil
  • 1 clove gar

Method

  1. Rinse and drain the bok choy, and pat it dry. Cut the leaves crosswise into ½-inch slices, and set aside. (Reserve the stems for another use.)
  2. Heat the oil in a large skillet or wok over high heat until it ripples. Add the garlic and ginger. Cook 1 minute, stirring.
  3. Add the bok choy and stir-fry until wilted and dark green, 2 minutes.
  4. Stir i
