Great served alongside your favorite burgers, or with a bowl of chili and some Hot and Sassy Corn Bread.

Ingredients

  • 5 ears fresh corn
  • cups Chopped red onions
  • 1 cup Chopped r

Method

  1. Cut the kernels off the ears of corn.
  2. Combine the corn kernels with all the remaining ingredients in a large saucepan. Bring to a boil, then reduce the heat and simmer until the mixture thickens slightly, 40 minutes. Set aside to cool, then transfer the relish to storage jars and refrigerate until ready to serve, but no longer than 1 week.
