Individually stuffed vegetables make a lovely presentation at any meal. We’ve enhanced the subtle sweet flavor of kohlrabi with shallots, seasonings, and parsley in this simple preparation.

Ingredients

  • 4 kohlrabi bulbs
  • 3 tablespoons unsalted butter
  • ½ cup Chopped

Method

  1. Trim and peel the kohlrabi bulbs, reserving the leaves for another use.
  2. Bring a saucepan of lightly salted water to a boil, and add the kohlrabi bulbs. Simmer until tender when pierced with a knife, 25 to 30 minutes. Then rinse under cold water, and drain. Set aside.
