Cultivated mushrooms dressed up for a special occasion with a bit of cream and a bit more Madeira. Lovely on toast or a puff pastry square. This is a great first course, or luncheon or supper fare.

Ingredients

  • 2 tablespoons unsalted butter
  • 1 tablespoon minced shallots
  • 2

Method

  1. Melt the butter in a skillet. Add the shallots and cook over low heat for 5 minutes. Sprinkle the shallots with the flour; then add the mushrooms, cream, Madeira, and thyme and stir.
  2. Simmer the mushrooms over low heat until the sauce has thickened slightly, 25 minutes. Season with salt and pepper, garnish with the chives, and serve.
