Method

  1. Place the potatoes in a saucepan, cover with cold water, and bring to a boil. Reduce the heat slightly and cook until the potatoes are tender, 20 to 30 minutes. Drain the potatoes, return them to the saucepan, and shake the pan over low heat to remove the remaining moisture, 10 to 15 seconds.
  2. Transfer the potatoes to the bowl of an electric mixer, or to a mixin
