Baked potatoes rise to new heights in this dish. Serve them with Double-Boiler Scrambled Eggs and pink champagne for a post-theater supper.

Ingredients

  • 4 Idaho potatoes (8 ounces each), scrubbed and patted dry 4 slices smoked salmon
  • 2 scallions

Method

  1. Preheat the oven to 375°F.
  2. Prick the potatoes all over with the tines of a fork, place them on a baking sheet, and bake for 1¼hours
