It’s hard to believe that butternut squash can be cooked in 6 minutes, but this microwave dish lets you enjoy it for dinner even when you don’t get home from work until late.

Ingredients

  • ½ butternut squash (about ¾ pound)
  • 2 eggs, lightly beaten

Method

  1. Butter four 5-ounce microwave-safe timbales or individual ramekins. Set them aside.
  2. Peel, seed, and shred the squash. You should have about 2½cups.
  3. Combine the squash with all the remaining ingredients except the dill sprigs, and mix until smooth. Divide the mixture among the prepared timbales.
