A fresh tomato paste to make when there is an abundance of ripe, juicy tomatoes.

Ingredients

  • 5 pounds large ripe tomatoes (6 or 7), cored and quartered

Method

  1. Place the tomatoes in a 4-quart microwave-safe bowl and cook, uncovered, at full power (650 to 700 watts) for 10 minutes. Stir, breaking up the tomatoes, and cook another 10 minutes. Stir again, and cook 20 minutes more.
  2. Pass the mixture through a food mill and return
