Mushrooms and barley, traditionally an Old World soup, are combined here with pecans, golden raisins, and thyme and cooked to just the right texture in the microwave. Serve as a side dish with your favorite poultry.

Ingredients

  • 4 tablespoons (½ stick) unsalted butter
  • 1 cup sliced fresh cultivated mushrooms

Method

  1. In a microwave-safe 2-quart casserole, melt 3 tablespoons of the butter at full power (650 to 700 watts) for 2 minutes.
