Creamy polenta with sweet Gorgonzola is perfect as a light but robust accompaniment to roasted lamb, pork, or game.

Ingredients

  • 2 cups milk
  • 8 tablespoons instant polenta
  • Salt and freshly ground black pepper

Method

  1. Bring the milk to a boil in a saucepan. Add the polenta, salt and pepper. Reduce to a simmer and continue cooking, stirring constantly, for 5 minutes.
  2. Tear the Gorgonzola into large pieces, and add them to the polenta along with the cream. Continue cooking until the cheese has melted, 2 to 3 minutes. Serve immediately.
