Black turtle beans and white navy beans are combined with other colorful ingredients in this salad. Serve it with grilled ribs and Six Pepper Slaw for a great southwestern meal.

Ingredients

  • 8 ounces dried black turtle beans
  • 8 ounces dried white navy beans
  • 1

Method

  1. Rinse and pick through the beans. Place them in separate pots or bowls of cold water to cover, and soak them overnight.
  2. Drain the beans, and place them in separate saucepans. Cover with water and bring to a boil. Reduce the heat and simmer until tender, 45 minutes to 1 hour.
  3. Drain the beans, rinse them under cold water, and pat dry. Combine the beans
