Pan-Fried Catfish with Scallions

Catfish, long a southern favorite, is now very popular from coast to coast. In the South it is being farmed in shallow pools, which gives it a flavor that is mild and delicate. We love it atop cilantro-laced black beans and sweet roasted peppers . . . you will, too. Place some lime wedges alongside—catfish, cilantro, and lime were made for each other.
