Closely related to the Australian salmon, we thought this tender, tasty white fish would take to the flavor of’ orange, and we were right.

Ingredients

  • ¼ cup fresh orange juice
  • 4 orange roughy fillets (about 6 ounces each)

Method

  1. Preheat the oven to 325°F.
  2. Pour the orange juice into a shallow baking dish large enough to hold the fish in one layer.
