This dish can be prepared with other potatoes, but Yukon Golds add an intensely buttery, rich flavor. The thin slices can be further cut into small circles to resemble the scales of a fish.

Ingredients

  • 1 tablespoon unsalted butter, at room temperature
  • 1 Yukon Gold potato, peeled and thinly sliced
  • Salt and freshly ground black

Method

  1. Preheat the oven to 350°F.
  2. Spread the butter in a medium-size ovenproof skillet. Arrange the potato slices, overlapping, in the skillet in the shape of the two salmon fillets, leaving space between the two. Sprinkle with salt, pepper, and the shallots.
