One of our dearest friends created and perfected this chicken—aren’t all sculptors perfectionists? We’ve had people stop us on the street to rave about this dish, and we always wish Bobbie and Bert were there to hear their praise. This is a good one!

Ingredients

  • 1 roasting chicken (about pounds), with its giblets
  • 1 lemon, halved

Method

  1. Preheat the oven to 425°F.
  2. Rinse the chicken well and pat it dry. Squeeze the juice of the lemon all over the chicken and in the cavity.
  3. Combine the mustard, ginger, and salt and pepper in a small bowl, and rub this mixture all over the chick
