A simple-to-prepare dish of Rock Cornish hens with a southwestern twist. The spices come through, adding great flavor, and the meat is perfectly moist. Delicious served with fresh Pineapple Salsa.

Method

Rinse the hen pieces well and pat them dry.
Combine all the ingredients except the hens and salsa in a mixing bowl, and stir well. Coat the hen pieces thoroughly with this mixture.
