The great sandwich of the southwest. We like to echo the flavors of the marinated steak and garnishes by serving our Black and White Bean Salad alongside. For a bit of cool, top with a dollop of sour cream.

Method

  1. Cut the steak crosswise to create four pieces.
  2. Stir the lime juice, oil, cilantro, chile pepper, garlic, cumin, salt, and pepper together in a medium-size bowl. Add the steak; turn to coat it in the mixture. Cover loosely, and let stand at room temperature for several hours or refrigerate overnight.
