These grilled marinated Portobello mushrooms—giant-capped beauties—are so lush and rich that if you close your eyes, you might think you’re eating filet mignon. And since they’re not available as much as we’d like, do let them take the spotlight. On croutons they can be the entrée. If you can’t find Portobello mushrooms, substitute porcini or cèpes with large flat caps.
