The origins of this dish are unknown (there probably wasn’t even a Joe), and its rather messy appearance and tendency to drip off the roll surely make it “sloppy”—but it’s delicious!

Ingredients

  • 2 tablespoons olive oil
  • 1 cup finely chopped onion
  • 1 rib

Method

  1. In a 2½ quart microwave-safe casserole, cook the oil on full power (650 to 700 watts) for 2 minutes.
  2. Stir in the onion, celery, bell pepper, and oregano. Cook 4 minutes.
  3. Crumble in the ground beef, breaking it up with a spoon. Cook 2 minutes; stir again to break up any clumps, and cook another 3 minutes.
