The flavors of thyme, rosemary, black pepper, and coriander permeate the lamb and flavor the potatoes at the same time. Green Beans With Roquefort and Walnuts would make a perfect accompaniment.

Ingredients

  • 1 leg of lamb (7 to 8 pounds)
  • 2 large cloves garlic, slivered
  • 5 tablespoons

Method

  1. Preheat the oven to 425°F.
  2. Cut slits all over the lamb with the tip of a sharp knife, and insert the garlic slivers in the slits.
  3. Brush the lamb all over with 2 t
