Simply prepared, our guinea hen is infused with the flavors of bacon and Madeira. Potatoes roast alongside garlic cloves and are refreshed by chopped Italian parsley just before serving.

Ingredients

  • 1 guinea hen ( to pounds), well rinsed and patted dry
