Dark raisins burst forth from this slightly pale version of pumpernickel rolls—barley malt syrup, cocoa, and espresso powder lend both flavor and color.

Method

  1. Stir the yeast, warm water, and sugar together in a small bowl. Let the mixture stand until the yeast starts foaming, 5 minutes.
  2. In another bowl, toss together the flours, caraway seeds, salt, and coriander.
  3. In a third bowl, combine the ½ cup water, barley ma
