  • 6 large ripe peaches (about pounds)
  • 2 cups dry white wine

Method

  1. Carefully peel the peaches with a vegetable peeler or a small sharp knife.
  2. Fill a medium-size heavy saucepan with the wine, water, and ginger. Bring to a boil over medium heat.
  3. Gently place the peaches in the liquid, reduce the heat to low, and simmer for 15 minutes. Using a slotted spoon, remove the peaches and set them aside to cool. Discard the liq
