When the restaurant La Tulipe first opened in New York, we were all thrilled. Sally Darr is a wonderful chef and her husband, John, a most gracious host. Sally’s apricot soufflé is the very best! If you’re in New York on Valentine’s Day, remember La Tulipe—it’s super-romantic.

It’s important to use California apricots here—no others have their color and flavor. The apricot purée will keep for several weeks in the refrigerator.
