This is a perfect dessert after an important meal—lovely on individual plates or in a crystal bowl.

Ingredients

  • ½ cup sugar
  • quarts cranberry-raspberry juice
  • 1 cinnamon

Method

  1. Combine the sugar and the juice in a large saucepan, and heat over medium heat, stirring until the sugar has dissolved. Add the cinnamon stick.
  2. Bring the mixture to a gentle boil and add the pears. Poach at a low simmer, turning the pears carefully, until they are easily pierced with a knife, about 20 minutes.
