This compote, with its rum-laced amber syrup, caramel-glazed clementines and kumquats, and sprinkling of little pomegranate rubies, is a stunning finale when served in a large crystal bowl.

  • cups water
  • 1 cup sugar

Method

  1. Prepare the syrup: Combine the water and sugar in a saucepan and heat over medium-low heat until the sugar has dissolved. Simmer for 5 minutes. Then cover the pan and let the syrup simmer as you prepare the caramel.
