  • Peel of 4 lemons
  • cups cold water

Method

  1. Combine the lemon peel and 1 cup of the cold water in a saucepan, and bring to a boil. Reduce the heat and simmer until the peel is soft, 15 minutes. Drain the peel, and carefully scrape off any white pith with a spoon. Only the zest should remain. Cut the zest into very thin st
