These little individual tartlets are just the right finale to a spring dinner.

Ingredients

Pastry

  • 1 cup unbleached all-purpose flour
  • ¼ cup sugar

Method

  1. Prepare the pastry: Toss the flour and sugar together in a bowl. Using a pastry blender, two knives, or your fingertips, cut in the butter until the mixture resembles coarse crumbs. Then add the egg and lemon zest, stirring until the mixture clumps together. Form the dough into a ball.
  2. Divide the dough into eight pieces, and press them into the bottom and sides
