Ingredients

Pastry

  • 1 cup unbleached all-purpose flour
  • Pinch of salt
  • 2 tablespoons sugar

Method

  1. Prepare the pastry: Combine the flour, salt, and sugar in a food processor. Add the butter and process with several quick pulses to coat the butter with flour. Then add the egg yolk and lemon juice, and process until the pastry is thoroughly blended and forms a smooth ball. Dust it with flour and cover with plastic wrap. Chill in the refrigerator for 30 minutes.
