We’ve lightened the usual mincemeat pie by wrapping it all up in delicate phyllo pastry. Serve these hot and crispy, right from the oven.

Ingredients

  • 2 tart apples, cored, peeled, and cut into large chunks
  • 1 orange, unpeeled, cut into large chunks, and seeded
  • Zest of 1

Method

  1. Combine the apple and orange chunks with the lemon zest in a food processor, and coarsely chop. Transfer the mixture to a large bowl, and stir in both raisins.
  2. Bring the vinegar to a boil in a large saucepan, and add the brown sugar, spices, and the apple mixture. Reduce the heat to low and simmer, stirring occasionally, for 30 minutes. Remove the pan from the
